The head chef at Castlemaine’s Railway Hotel, Brunno Rocha, has been featured in a cooking segment on the Channel Ten television program The Project.
Brunno said the show came about through their potato supplier, Ian Cahill, aka ‘The Potato Man’, and the idea was to show all of the varieties
of potatoes and how to best cook them.
The Railway Hotel currently stocks six different varieties of potato and features them in their menu. One of their dishes is a side of three different varieties of potato roasted with brussel sprouts, brazil nuts, rosemary and garlic.
Brunno has been working at the Railway Hotel for over a year and says he likes work closely with local suppliers. “Ian was one of those suppliers – he had different potatoes so I wanted to showcase that,” Brunno said.
The cooking segment was filmed on Wednesday, June 11, and aired last night, Thursday, June 19.
“I feel proud that something we’ve been working on for over a year is finally getting shown to the people,” Brunno said.
Brunno is originally from Brazil and came to Australia six years ago. He lives in Chewton with his wife Sarah.
